Rice with rabbit and snails

Ingredients (4 people)

  • 1 rabbit
  • snails
  • 400 gr. of rice
  • 1 ml. of beef broth
  • 2 tomatoes
  • 200 gr. of almonds
  • 200 gr. fried bread
  • 1 green pepper
  • 4 garlic
  • 1 sprig of parsley
  • 2 tablespoons of salt
  • 1 teaspoon of pepper
  • some bay leaves
  • a small bouquet of thyme
  • 20 gr. of saffron

Preparation

Cut the rabbit into regular pieces. Then season it with salt, pepper and thyme and fry it. Add the onion, the pepper and the chopped garlic in the same pan and let it brown.

After browned, add the tomato -clean skin and seeds-, add the rice and the meat broth in the same proportion of the paella. Always work the stew over low heat. Add the previously cooked snails.

On the other hand, prepare a mix with the fried bread, toasted almonds, garlic and rabbit liver. To finish add the stew five minutes before finishing the cooking.
