Ham strudel from Teruel
Ingredients (4 people)
- 200 gr. of ham D.O. Teruel
- 250 gr. of cardoon mushrooms
- 4 cloves of garlic
- 2 ripe tomatoes
- an onion
- 1 ml. Of olive oil
- a green pepper
- 3 tablespoons of fried tomato
- a red pepper
- 2 ml. of meat juice
- a medium zucchini
- Salt
- ground pepper
- 2 carrots
Preparation
Peel the garlic and cut into slices. Then heat them in hot oil and once they are golden add the vegetables and mushrooms, well washed and cut into thin julienne.
Also, add the fried tomato, salt and a little ground pepper, leaving it to simmer for 15 minutes. This way, the vegetables will be al dente, that is, a little crispy. Once the quarter of an hour is up, crush one third of the vegetables with the juice of the meat and put them through the strainer so that there is a fine sauce.
Cut the ham into thin fillets in a rectangular shape and lightly slice through the griddle. Form the strudel by sandwiching three slices of ham with two layers of vegetables. Finally, cover with hot sauce.
