Fried dry tomatoes from Caspe

Preparation
First of all, you should put the tomatoes to dry in a reed so that, with the help of the sun, they lose all the water and look dry. When dry, let them sit overnight in warm water. The next morning put them to fry in a pan with plenty of hot oil. Tomatoes recover all the spirit of summer condensed and enhanced with frying.
