Les faire frire dans une po\u00eale avec de l&rsquo;huile d&rsquo;olive tr\u00e8s chaude. Ils doivent \u00eatre croustillants \u00e0 l&rsquo;ext\u00e9rieur et crus \u00e0 l&rsquo;int\u00e9rieur. Flambez-les avec le brandy et mettez-les dans un plat \u00e0 part. Retirez la graisse de la po\u00eale o\u00f9 vous avez frit les surlonges et ajoutez le vin rouge et la p\u00eache en lani\u00e8res.
