Avant qu&rsquo;ils ne prennent de la couleur, ajoutez un peu d&rsquo;eau de la cuisson des asperges et quand il commence \u00e0 bouillir, pocher les \u0153ufs, en intercalant les extr\u00e9mit\u00e9s de ceux-ci afin qu&rsquo;ils soient s\u00e9par\u00e9s. Puis ajouter un filet de longe et deux morceaux de saucisse, frits \u00e0 l&rsquo;avance.
