feuilles en morceaux d&rsquo;un \u00e0 deux centim\u00e8tres d&rsquo;\u00e9paisseur. Mettez-les \u00e0 cuire dans l&rsquo;eau avec du citron pendant dix minutes et, lorsqu\u2019ils seront tendres, r\u00e9servez-les dans leur propre bouillon.<\/p>\n<p>Dans une autre cocotte, mettez un demi-centim\u00e8tre d&rsquo;huile pour chaque demi-litre de cardon. Faites revenir une gousse d&rsquo;ail et quelques brins de persil bien hach\u00e9. Ajouter une cuill\u00e8re \u00e0 soupe de farine et ajouter un quart de litre de bouillon cuit ou de l&rsquo;eau. Faites bouillir cette sauce et, apr\u00e8s avoir \u00e9goutt\u00e9 le bouillon de cuisson, ajoutez la sauce que vous venez de pr\u00e9parer, en laissant la p\u00e2te s\u2019\u00e9goutter pendant cinq minutes.<\/p>\n<p>Pendant ce temps, \u00e9crasez 12 ou 14 amandes grill\u00e9es avec deux cuill\u00e8res \u00e0 soupe d&rsquo;eau jusqu&rsquo;\u00e0 ce qu&rsquo;une p\u00e2te tr\u00e8s fine soit form\u00e9e. La dissoudre avec un peu de sauce aux cardons et m\u00e9langez avec le rago\u00fbt. Enfin, ajoutez le sel.
